Eating a healthy lunch that is light and fills you up is not that hard. Today, I heated up some leftover rice and steamed broccoli and edamame for a meal fit for a queen. (I am certainly not a princess!) Not only was it was super easy to make, it was delicious and it kept me full for about 5 hours. Here is what I did:
- steam broccoli & edamame
- heat up 1 cup of cooked rice (white or brown) in a pan with 2 tbsp. of Earth Balance butter
- throw in a sprinkle of parmesan cheese
- Add the veggies + salt and pepper
Eat up!
